Walking to the Red Cabbage Cafe was a bit A-mazing, the twists and turns through the hidden corners of Puerto Vallarta opened eyes to the memory clad cafe. The walls lined with paintings, the halls opening and closing to quiet nooks and for the rubber necks, crannies. Plated with pomegranate seed perfection, the “Chilies en Nogada” were the same as they were seven years ago. No marketing reframe, no cultural adjustment, no happy meal — simple steadfastness to a recipe that would take days in your own kitchen with love, skill and art.

The restaurant has a focused eye on Mexican foods! The historical presence of Frida Kahlo and Diego and their New Year’s Eve dinners create both mystique and visual accent. The location belies the menu and the dinning experience. The surprising arrival of the Spinach Salad as a cold cooked dish with hints of nutmeg and shredded traditional Mexican queso. A visual feast on a majoilica pallet. The corner-cut square punctuated with tomatoe slices. A cloud of presence dusting the dark spinach.

With art clad walls as backdrop, even this group shot highlights colour, texture and age. The off beat location, guest list and retro set makes for a night out of town in town. With skilled partner manipulation we were able to get our forks into eight dishes and desert! There was no deterioration with upgrades. Simple loving maintenance kept faith with the original.

In the bano on the walls the tourist quotes abound. Tales of fire and fury signifying nothing! A truly social place to play! The preservation of tradition creating nostalgia and building blocks for a solid future.
